A grease interceptor (G.I.) is a plumbing device designed to trap fats, oils, grease, and food solid (FOGS) waste before entering the city sewer line. Because of its enormous size, these devices are generally outdoor on a loading dock, parking lot, or garage.
Due to a heightened amount of sanitary sewer overflows (SSO's), it has become a requirement that all food servicing establishments (F.S.E.) acquire a device that will capture the majority of F.O.G.S. waste entering the sanitary line. F.S.E.'s that have grease interceptors are mandated to properly maintain the equipment warranting that it is serviced on time or when its combined FOGS content reaches 25%.

Grease interceptors are usually placed outdoor because of their enormous size. Unlike grease traps, most of these units are cleaned quarterly to prevent the FOGS content from exceeding the 25% allowable capacity. A grease trap or grease interceptor overflow can be very tricky to resolve. Most overspills that occur with these devices, the majority of them are due to blockage that may be caused by a lack of maintenance. Although grease interceptors trap the majority of the FOGS waste exiting into the sewer system, it does not prevent 100% of FOGS from escaping the device, eventually leading to pipe contamination. We highly recommend having the plumbing lines cleaned periodically by performing a hydro-jetting service.

Preventative maintenance is critical to prevent the higher cost of a grease interceptor or grease trap pumping service. The pricing to pump and clean a grease interceptor outdoor is determined by size, condition, and location. A poorly maintained or neglected grease interceptor can cost up to 4x higher than devices that are regularly maintained.
Excessive FOGS content or improper interval cleaning can be damaging to the device. Grease interceptors exceeding the maximum allowable FOGS content of 25% will incur additional disposal costs.
As time progresses, FOGS content in the GI does solidify, making it harder to break down and pump out, requiring extra time and labor cost. Infrequent or lack of service can negatively affect the concrete precast, which the majority of grease interceptors are made of. The waste inside the device contains acids with improper PH levels, damaging the grease interceptors' walls causing it to pit.
